Cuál Bicicleta

Óscar Omar Alonzo Aguilar

Óscar Omar Alonzo is a pioneer of organic and alternative processing in Marcala. His farm, Cuál Bicicleta, is a model of biodiversity and sustainable practice, producing some of the region's most expressive lots inside Honduras's first coffee Denomination of Origin. Finca Cuál Bicicleta's story doesn't start with triumph. Chemical farming had gutted the farm's output from 850 sacks down to just 80, and Óscar Omar Alonzo was on the verge of giving it all up. Then a single worn page of a book he was reading stopped him. Page 33 told the story of a cyclist who refused to quit with 80 kilometres still to go. That image gave the farm its name and Óscar a philosophy he has lived by ever since. From the year 2000, Finca Cuál Bicicleta has been run on entirely organic and biodynamic principles. It has since become one of COMSA's most recognised farms, shared its model with audiences at Harvard and universities across Japan, and now exports elite micro-lots to more than 23 countries, consistently scoring between 87 and 91+ on the SCA scale.

Waca Farms

Walter Castellanos

At 1,600–1,700 metres above sea level, in the highlands of Chinacla, La Paz, we found a farm that had been left to fend for itself. We saw what it could be. This year we took it on and began bringing it back to life: renewing the soil, tending the trees, and giving every plant the attention it had been missing. We’re growing Catuaí, IHCAFE 90 and Lempira. Our first harvest arrives in the 2026/2027 season. We don’t know exactly what it will taste like yet, and that’s the exciting part. We’ll be here, waiting for our first cup.
